Starting before I could cook
Byrdhouse opened a few months before the pandemic, chasing one thing: a burger worth falling in love with. I could not find it here, so I set out to make it. What I should admit is that I could not really cook yet. We started anyway, a small team working out of a home kitchen.
Down to one
The team had other commitments, and the brand was not doing well enough to hold anyone to it. They moved on, one at a time, until Byrdhouse was just me. Those were the quiet years, and they are the years the cooking was actually learned.
The question changed
By 2024 I could cook properly, and customers had started asking for something else. Not a burger for tonight. A week of food they could plan around. That is where Byrdman came from: macro-counted meal prep, weighed and portioned, out of the same kitchen the burgers come from.
Meal prep took over
The plans picked up through 2025, around the same time I moved to eating clean myself, and Byrdman became the main thing this kitchen does. The burgers are still on, five to an order, mixed however you like. But most weeks now the work is weighing portions and packing boxes for people with a goal. There are more of them than there have ever been.
